Abstract : Acrylamid (ACR) is a human neurotoxicity that was detected in several heat- processed foods, such as French fries and crisps . The present study evaluated the effect of acrylamide on the neurotransmitters epinephrine (E) ,norepinephrine(NE) ,dopamine (DA), and gamma amino butyric acid (GABA) in different brain regions , I . e . Cerebellum , brain stem , striatum , cerebral cortex, hypothalamus and hippocampus . Also , the neuroprotective and therapeutic effect of Rosemary (Rosmarinus officinalis L) leave extract was investigated against acrylamide – induced neurotoxicity in male albino rats . chronic administration (i.p) of acrylamide (30mg/kg b.wt) for four weeks and its subsequent withdrawal caused a significant decreased in E , NE , DA and GABA content in all tested brain regions at the mentioned different time intervals . This may be due to axon and nerve terminal degenerative , which caused changes in transmitter synthesis , storage , uptake , release and reduction in synaptic vesicle : as a result the content of neurotransmitters is decreased . Chronic administration (i.p.) of rosemary extract (100 mg/kg b. wt) for four weeks and subsequent withdrawal caused a significant decreased in neurotransmitters (E , NE , DA , GABA ) content in all tested areas at most of time intervals student . This is may be , in part due to the presence of caffic acid and rosmarinic acid which affected the uptake of mono amines and monoamines oxides activity . At the same time the extract contain ursolic acid and carnosol which increase in nitric oxide (NO) levels so the content of neurotransmitters is decreased . The present study revealed that moderate improvement in neurotransmitters content in protective ,therapeutic groups that received acrylamide , and the coadministration groups . This is may be due to its attribution to its antioxidant , anti-inflammatory and free radical scavenging activities on acrylamide neurotoxicity . Also ,.From this results , we can say that the Rosemary extract has neuroprotictive role against acrylamide neurotoxicity effect .
