Abstract : Obesity and overweight are common problems among females in Saudi Arabia. Several studies have suggested that cereals have physiological and metabolic properties and contribute to weight reduction. Quinoa (Chenopodium quinoa) is a pseudo-cereal with high biological value proteins, carbohydrates of low-glycemic index, and phytosteroids. This study aimed to investigate the effect of quinoa consumption on body weight measurements in overweight and obese females in two phases. First phase aimed to select the optimal percentage of quinoa flour (25% or 30%) in bread formulation for a human intervention study. Second phase used quinoa bread and quinoa seeds to study their effect on body weight. Twenty-two females aged 19–21 years, with body mass index (BMI) >25 kg/m2 completed four-week intervention period. During the four weeks, control group consumed a regular restricted diet. The quinoa group consumed a restricted diet and replaced all carbohydrates with black quinoa seeds. Body composition, anthropometric measurements, and dietary intake were collected at beginning and end of the intervention period. Physiochemical analysis results of bread showed a significant increase in protein and a significant decrease in carbohydrate content by increasing quinoa flour percentage. Increasing percentage of quinoa flour decreased height and volume and increased weight of the bread compared to control bread. In sensory evaluation, 25% quinoa bread received higher overall acceptance compared to 30%. Thus, 25% quinoa bread was selected for human intervention part. After quinoa consumption, there was a significant decrease in body weight, BMI, and body fat percentage compared to control. Moreover, the results showed a significant increase in total body water and a significant decrease in lean body mass in between-group analysis. Overall, the results suggested a potential beneficial effect of consuming quinoa on the treatment of obesity. Therefore, quinoa consumption could be recommended as part of body weight-lowering dietary plans. Keywords: Quinoa, Body weight, Quinoa flour, Bread.
